Why do I still have allergy symptoms to my cat or dog after having them for several years. Shouldn’t I have built a tolerance as is done per allergy immunotherapy?

By using immunotherapy you are exposing your immune system to a controlled predictable small amount of allergen versus inconsistent, potentially high allergy exposures to your pet that can overwhelm your immune system. Over time your body has the ability to build the immune tolerance that allows you to be around pets with little to no allergy symptoms.
